Perbacco draws on the same parcels in Castiglione Falletto, Barolo, Monforte, La Morra and Novello that feed the estate's Barolo, so the structure is familiar even though the ageing is shorter. It is fermented with native yeast and matured in large casks for around two years.\u003c\/p\u003e\u003cp\u003eServe at 16 degrees with pasta, roast pork or a plate of salumi.
