The variety gives a firm, textural white with real capacity to age, quite unlike the region's lighter Cortese. The hills here are clay and limestone at moderate altitude. Vietti ferments in stainless steel and holds the wine on lees to build texture.\u003c\/p\u003e\u003cp\u003eServe at 11 degrees with rich fish dishes, veal or aged cheese.
