Its winery is in the Maipo Valley, while fruit comes from several valleys chosen to suit each variety. For this wine the grapes are grown in the warm Colchagua Valley, where Carménère ripens fully and loses the green edge it can show in cooler spots. A small share of Syrah is blended in for extra depth and spice, and a good portion of the wine spends time in French oak before bottling. Carménère arrived in Chile from Bordeaux in the 1800s and was long mistaken for Merlot, only being properly identified in the 1990s.\u003c\/p\u003e\n\u003cp\u003eAt the table it is an easy partner for barbecued meats, empanadas, lamb kebabs or a hearty bean chilli. Serve at around 16 to 18 degrees.
