Low yields, wild yeasts and clear fruit over extraction are the common thread. Rosso uses the same Sangiovese Grosso as Brunello, from younger vines or earlier-drinking parcels, with a shorter required ageing. It ferments on skins in temperature-controlled tanks, then spends about a year in large casks and used barriques.
