Hand-harvested bunches were pressed whole to tank and then racked to French oak barriques, where fermentation started on its own. Malolactic conversion is part of the plan for this block, softening naturally high acidity and adding flesh through the palate, and the wine spent nine months in barrel with the lees stirred every four weeks. The Block 5 wine gets identical treatment and turns out rounder; this one stays tight.\u003c\/p\u003e\n\u003cp\u003eCitrus zest and white flowers, intense and drawn-out, with a saline chalky finish. Twelve degrees.
