Destemming kept the berries whole where possible, and each parcel fermented separately in open vessels with gentle pumpovers or plunging over thirteen days; some were held on skins up to twenty-five days before pressing. The batches then went into tight-grained French oak, half new, for sixteen months and stayed apart until blending, since the assembly is made only after ageing, when it is clear what each barrel has become.\u003c\/p\u003e\n\u003cp\u003eCassis and dark plum with cedar, tobacco and a fine dusty tannin structure. Serve at 17 degrees after an hour in a decanter.
