It joins the mainstays, Old Block from 1978 and Block 12 from 1995. Ninety-four per cent Cabernet Sauvignon, the rest Merlot. The grapes were hand-harvested and destemmed with whole berries kept intact, fermented separately over fifteen days with gentle pumpovers or plunging, and some parcels held on skins as long as twenty-six days. Sixteen months in tight-grained French oak followed, with blending left until after maturation.\u003c\/p\u003e\n\u003cp\u003eBlackcurrant, bay leaf and graphite over a firm, fine-grained tannin structure and a long savoury close. Serve at 17 degrees, decanted.
