Hand-harvested and destemmed to retain whole berries, the parcels fermented cool, under 25 degrees, across fifteen days, with regular gentle pumpovers or plunging. They matured apart for sixteen months in tight-grained French oak before blending. Margaret River's maritime climate gives Cabernet a long, even ripening that few Australian regions can match.\u003c\/p\u003e\n\u003cp\u003eDark berry and cassis with cedar, mint and a graphite edge, the tannins fine and long. Serve at 17 degrees.
