Destemming and sorting kept the berries whole. Fermentation was cool and split between small open-top vats and concrete, with plunging or pumpovers twice a day, and parcels sat between seventeen and twenty-three days depending on how they were tracking. Pressing went to tight-grained French oak, forty-seven per cent new, and the blend was assembled in October 2021. Concrete has crept into the reds here in recent years, adding freshness without oak flavour.\u003c\/p\u003e\n\u003cp\u003eCassis, dark cherry and violet with cedar spice and polished tannin, more approachable young than earlier vintages. Serve at 17 degrees.
