Parcels are fermented separately in open-top vessels and given an extended maceration before maturing in tight-grained French oak, and the wine is then held at the winery for around a decade before it is released. We hold no tech sheet for this release, so the exact blend, oak regime and bottling date are left out rather than filled in.\u003c\/p\u003e\n\u003cp\u003eA decade on, the fruit has turned savoury: blackcurrant with cedar, tobacco and dried herbs, tannins fine and fully resolved. Serve at 17 to 18 degrees, decanted briefly.
