The vineyard carries nine clones, each contributing something different: Gin Gin for power, the Bernard selections 95, 96 and 76 for restraint and finesse. Eight blocks were picked by hand, cooled overnight and whole-bunch pressed to French oak with 38 per cent new for a natural ferment. Selected parcels went through malolactic, and nine months in barriques with regular batonnage preceded bottling in January 2021.\u003c\/p\u003e\n\u003cp\u003eNectarine and lemon curd with a nutty, flinty edge and long saline acidity. Twelve degrees, in a decent-sized glass.
