The fruit was picked by hand, cooled overnight and pressed as whole bunches into French oak barriques for a spontaneous ferment. Selected parcels went through malolactic conversion. Most of the wine aged nine months in barrique with regular stirring, while a fifth finished its last three months in concrete, which adds texture without adding oak flavour.\u003c\/p\u003e\n\u003cp\u003eCitrus and white stone fruit with a chalky, saline line and restrained oak. Serve at 12 degrees.
