The vineyard lies on gentle slopes of red-brown gravelly topsoil over stony clay, a metre or so deep, with the Indian Ocean close enough to temper the heat. Fruit was pressed and settled overnight, then fermented across concrete tanks and French oak puncheons, a tenth of them new. Six months on lees followed, with regular stirring for texture, before blending and bottling in September. The Gingin clone supplies the grapefruit spine; the other clones fill in around it.\u003c\/p\u003e\n\u003cp\u003eThere is grapefruit and lemon pith up front, then a chalky, saline finish with just enough oak to frame it. Serve cool, around 11 degrees.
