Each parcel was pressed and left overnight to settle, then fermented in a mix of concrete and seasoned French puncheons with a tenth new. Eight months of lees stirring built weight and detail. Gingin clone material gives the grapefruit and citrus backbone; the smaller blocks planted to other clones add purity and lift. The soils here are gravelly and shallow, over stony clay, on slopes that catch the sea breeze.\u003c\/p\u003e\n\u003cp\u003eAromas of white nectarine and lemon zest, then a broad, textural palate that finishes clean and salty. Serve at 11-12 degrees.
