Fruit is grown organically and sustainably, and the blend lands at 68 per cent Cabernet, 30 per cent Merlot and 2 per cent Cabernet Franc. Each parcel was destemmed without crushing and fermented separately across open, static and concrete vessels, worked twice a day by hand plunging or pump-over. Twelve months in French oak followed, then blending, a light filtration and bottling in April 2021. The second label is the estate's approachable range, built to drink young.\u003c\/p\u003e\n\u003cp\u003eCassis and red plum with a leafy lift and a savoury, gently gripping finish. Sixteen to eighteen degrees. It goes well with lamb backstrap, a beef and mushroom pie, or grilled eggplant with tahini.
