Clone 337 on Ullingers Block 4 supplies the fruit, and it carries less tannin than most Cabernet selections, which is the whole point. The fermenter was built in layers, 30 per cent whole bunches sandwiched between destemmed berries, and the juice spent only seven days on skins before pressing. Fermentation finished in stainless steel, then three months on light lees. Margaret River is better known for serious, structured reds, which makes this a useful reminder of what the variety can do at the other end of the scale.\u003c\/p\u003e\n\u003cp\u003eSour cherry and aniseed, prickly tannins and a savoury, dry finish. Chill it to 14 degrees and it comes alive.
