All three sites are organically farmed and crop low on stony, gravelly ground. Layering was the method again, 30 per cent whole bunches between destemmed fruit, with just five days on skins to keep tannin to a whisper. Fermentation finished in stainless steel, three months on light lees followed, and bottling happened unfined in July 2021.\u003c\/p\u003e\n\u003cp\u003eRaspberry, redcurrant and dried herb, light on its feet and finishing dry and a little peppery. Serve it at 14 degrees, straight from the fridge in summer.
