Hand-picked bunches were pressed whole and gently, settled overnight, then fermented in stainless steel tanks. Bottling for the second fermentation came in June, and the wine rested on lees until February 2022 before disgorgement with a light dosage. Margaret River makes very little sparkling wine, and less still from this variety, which is part of what makes it interesting.\u003c\/p\u003e\n\u003cp\u003eLemon curd, pear skin and a touch of bready lees, dry and taut on the finish. Six to eight degrees.
