Everything else comes from Weightmans Block 1, a patch that ripens and builds flavour early while keeping acidity high and alcohol low. Bunches were hand-picked and pressed whole straight to tank for a cool ferment. After a short maturation the wine was bottled for its second fermentation and left on lees until February, then disgorged, the dosage light at four to five grams per litre.\u003c\/p\u003e\n\u003cp\u003eThere is apple and lemon up front, then a savoury, nutty note from the oak portion and a dry, mineral finish. Six to eight degrees.
