Early ripening is why the block was selected in the first place: full flavour at low sugar, with acidity still high. Hand-picked bunches were whole-bunch pressed to tank for a cool ferment, with a small parcel set aside in a new oak puncheon for extra dimension. After a short maturation the wine went to bottle for its second fermentation and stayed on lees until March 2025.\u003c\/p\u003e\n\u003cp\u003eApple crunch and sharp lemon, honey and toast behind, and a fine bead carrying a racy, dry finish. Serve at 6-8 degrees.
