The domaine was laid out by Capuchin monks in 1612 around a clos that had been vineyard since the ninth century, and two Faller brothers bought it in 1898. Théo Faller made its modern reputation; his daughter Cathy runs it now with her sons Eddy and Théo. Twenty-nine hectares in the Kaysersberg valley take in ten on the granite of the Schlossberg, the marl and limestone of Furstentum, Mambourg and Marckrain, the limestone, clay and sand of the Altenbourg, and the Clos itself on sand and silt over granite pebbles. The vines have been farmed organically for two decades and biodynamically since 1998, with certification from 2005. Pressing is slow and whole-bunch, fermentation runs on indigenous yeasts, and ageing is in foudres of 1,500 to 6,000 litres with no new oak.\u003c\/p\u003e\n\u003cp\u003eIt will drink well over the next several years.
