Catherine has led the estate since 2016 with her sons Eddy and Théo. Its thirty-eight hectares are farmed organically and biodynamically, certified by Ecocert and Demeter, at yields of about 30 hectolitres per hectare. Furstentum sits high on a warm, south-facing slope on thin, stony soil over limestone and marl, and the warmth and sharp drainage suit Gewürztraminer, giving the variety's aromatic lift with more structure and mineral grip than it shows on heavier ground.
