Its soil is brown clay full of limestone with a pebbly structure that holds both moisture and warmth, and the terraces rise sharply from 300 to 400 metres from the northern limit of Altenbourg up the Mont de Sigolsheim. Domaine Weinbach, at the foot of the Schlossberg in Kaysersberg, farms biodynamically. Sélection de Grains Nobles wines are far scarcer and richer than Vendanges Tardives, requiring a berry-by-berry harvest and, for Gewürztraminer, a minimum of 279 grams per litre of sugar at picking; they also carry considerably more botrytised fruit. This was wild-fermented and aged in stainless steel for 18 months, and the site's structure keeps a wine of this weight from becoming heavy.\u003c\/p\u003e\n\u003cp\u003eDrinking now and capable of decades in the cellar.
