The estate is farmed biodynamically. Muscat is one of the four noble varieties of Alsace and is usually made in a floral, faintly off-dry style; this bottling deliberately does the opposite. It is a blend of old-vine Muscat Ottonel, around 70 per cent, and Muscat Blanc à Petits Grains, known locally as Muscat d'Alsace, rooted in the granitic gravel of the clos. Yields are kept low and the wine is raised in large-format oak, which builds potency and structure alongside a savoury presence and the salty signature of the Capucins soils. Winemaking otherwise mirrors the estate's other dry whites, though the Muscat is given a flash of skin contact to add complexity and grip.\u003c\/p\u003e\n\u003cp\u003eBest drunk in its first five or six years.
