Domaine Weinbach farms the Clos des Capucins, established by Capuchin monks in the seventeenth century and worked biodynamically by the Faller family, and the Sylvaner comes from old vines on the sandy, rocky soils inside the clos, which are early-ripening and drain freely. The fruit was pressed gently as whole clusters, then fermented with indigenous yeasts in old oak vats, an approach the domaine believes adds depth and complexity without imposing oak flavour. The combination of vine age, low yields and that warm, well-drained site gives a restrained, taut white with savoury aromatics and real concentration behind the acidity.\u003c\/p\u003e\n\u003cp\u003eReady on release and good for five years or more.
