Distillation is on a traditional Holstein still, and the aim throughout is to keep as much of the raw fruit aroma as possible rather than to build character in cask; these spirits are bottled clear and unaged. The range runs to Marc de Pinot, Marc de Gewürztraminer and Marc de Muscat alongside fruit distillates such as the Mirabelle. This bottling is made from Williams pears, the variety that gives the style its name and its distinctive perfume, and it is among the more precise examples of the genre coming out of Alsace.\u003c\/p\u003e\n\u003cp\u003eServe in a small glass at 8-10°C at the end of a meal, or with a slice of apple or pear tart.
