Riesling is the smaller part of the range and comes from the stonier parcels, where the variety finds the drainage and the cooler exposure it prefers; loess alone tends to suit it less well. The estate farms biodynamically, harvests by hand and ferments with indigenous yeasts. As with the Grüners, malolactic fermentation is avoided and the wine is bottled dry, with its natural acidity left intact rather than softened.
