Fermentation was slow in old oak with a small whole-berry portion, and the wine matured seventeen months before bottling. He says he went in without a style in mind, though he is pleased by the resemblance to a young Chinon, calling it bright and youthful with plenty of bounce.\u003c\/p\u003e\n\u003cp\u003eRaspberry, capsicum leaf and crushed violets, medium-bodied with sappy tannin and a clean, savoury finish. Serve at 15 degrees, or cool it slightly in warm weather.
