Roughly 20 per cent of the ferment went in as bunches, which is where the spice and the fine tannin come from. Twenty days on skins followed, then pressing to French barriques, almost all of them seasoned with only a token 5 per cent new, and a short maturation before bottling. The second label at Hoddles Creek gets the same vineyard attention as the estate wines; the difference is in the élevage, not the care.\u003c\/p\u003e\n\u003cp\u003eRed berries, a twist of black pepper and something faintly sappy, with silky tannin and a bright, mouthwatering finish that invites the next glass. Serve at 14 degrees, or lightly chilled in warm weather.
