The oldest block sits on it, and 97 per cent of the blend is Cabernet with 3 per cent Petit Verdot. Chris Davies hand-picks and sorts, then crushes and destems before a ferment in small open-top vessels, plunged by hand and left to macerate well past the end of fermentation. A traditional basket press moves the wine to old French barriques for eighteen months, where the tannins settle without picking up new wood.\u003c\/p\u003e\n\u003cp\u003eBlackcurrant, tobacco leaf and a stony, ferrous note, with tannins that are smooth and drawn out. Serve at 17-18 degrees. Roast lamb, a rare steak, or a plate of aged cheddar and quince paste.
