This is the other version, pitched at the textural, savoury wines of the Loire. The fruit comes from the oldest vines on the property, in the ground since 1996, growing in gravelly loam over clay that is naturally high in minerals, with rows oriented north to south to hold acidity and mineral character. Picking happens at first light, and the grapes are chilled, pressed as whole bunches with only the free-run juice kept, then left to ferment spontaneously in two-year-old French barriques and age on lees for twelve months.\u003c\/p\u003e\n\u003cp\u003eQuince, baked apple and a waxy, honeyed edge, with real texture and a firm, dry, mineral finish. Serve at 11-12 degrees.
