Good drainage from loam over gravel helps, as does careful, sympathetic pruning and canopy work, which is where most of the effort goes. A small proportion of whole bunches was included in the ferment, along with a dash of Viognier picked from the eastern edge of the Home Block, co-fermented for extra lift. After a basket pressing, the wine matured in French oak barrels for twelve months before bottling. Margaret River grows very little of this kind.\u003c\/p\u003e\n\u003cp\u003eRed plum, dried flowers and white pepper, with sinewy tannin and a savoury, drawn-out finish. Fifteen to sixteen degrees, and a light chill does no harm.
