That mix is where much of the complexity comes from. Jorge Serôdio Borges and Sandra Tavares da Silva have the fruit trodden by foot in granite lagares and fortified part-way through fermentation, leaving sweetness and plenty of structure. Only a short time in cask follows, then it ages in bottle and throws a deposit.\u003c\/p\u003e\u003cp\u003eSweet and dense, with black fruit, spice and firm tannins.
