Sandra Tavares da Silva and her husband Jorge Serôdio Borges, based in the Vale de Mendiz near Pinhão, are better known abroad for table wines but have deep roots in Port. Here the fruit ferments on skins with vigorous extraction and is fortified partway through. A few years in large vats and older casks lets it knit while keeping deep colour and fresh fruit.\u003c\/p\u003e\u003cp\u003eRich and sweet but not heavy, with dark berries and a warming finish.
