This one is a shade over five years old, made from spirit matured in an Oloroso sherry hogshead alongside components raised in a bourbon barrel. Numbers are tiny at 470 bottles in total. The distillery is Scotland's most northerly on the mainland, running since 2013 on a site beside the ruins of a nineteenth-century original, and it bottles without chill filtration or added colouring.\u003c\/p\u003e\n\u003cp\u003eSherry-led, with sultana, orange marmalade and a soft vanilla edge from the bourbon wood. Drink it neat at room temperature with water within reach.
