The Caley honours Fred Caley Smith, who toured the wine regions of the world in the late nineteenth century. It unites Coonawarra Cabernet Sauvignon, with its fresh, refined leafiness and notes of green olive and iodine, and Barossa Shiraz, which contributes red currant, spice and weight. Fine oak maturation and long bottle age have brought the two together, leaving a wine of richness, precision and a long, balanced finish.\u003c\/p\u003e\n\u003cp\u003eDecant before serving to separate the wine from any sediment and let it breathe. Serve at 17 to 18 degrees.
