That thin topsoil drains freely and pushes vine roots down into the limestone, while the district's cool, maritime climate gives Cabernet Sauvignon its defined, savoury character. The fruit is matured in oak, adding cedar and a hint of mocha to blackcurrant and mulberry. The palate shows violets and mulberries with chocolate and currant, finishing long with powdery tannins.\u003c\/p\u003e\n\u003cp\u003eLamb cutlets, a peppered steak or a mushroom stroganoff make fine partners at around 16 to 18 degrees.
