They leave a firm oak imprint that the Shiraz, drawn from Barossa Valley and Eden Valley vineyards, is chosen to absorb. The 2019 season was dry and low-yielding, and the wine is intense, with dark plum, black cherry and blackberry joined by vanilla, spice, chocolate, black pepper and praline. The palate is rich and balanced, with blackberry pastille, cassis and sage, then roasted nuts and fine, chocolaty tannins.\u003c\/p\u003e\n\u003cp\u003eDecant well ahead and serve at 17 to 18 degrees. Try it with rolled pork belly, beef short ribs or a hard sheep's cheese.
