At 0.21 hectares it yields only a barrel or two, about 1300 bottles in all. Everything is done by hand: organic farming, ploughing between the rows, hand harvesting and fermentation with the vineyard's own yeasts. The fruit is destemmed and macerated slowly before a long élevage in seasoned oak, with no new wood, so that the clay over limestone character of the parcel carries the wine rather than the barrel.
