This bottling takes the same fruit as the classic cuvee but replaces barrel ageing with terracotta amphora, a vessel that allows a slow, gentle exchange of oxygen without adding any oak flavour. The result is a more transparent reading of the site. The Amirault family works organically, ploughs between the rows, picks by hand and ferments with the vineyard's own yeasts, with a long maceration in the vat before the wine is transferred to amphora for its elevage.\u003c\/p\u003e\n\n\u003cp\u003ePure and mineral in style, with fine tannin and no oak framing; it works with roast poultry, charcuterie and grilled vegetables.
