The grapes were hand harvested and destemmed into open-top fermenters, where they sat on skins for ten days, then spent a few months in large concrete eggs before bottling. Concrete gives a slow, even maturation with no oxygen ingress to speak of and no oak flavour, which keeps the aromatics clear. Nothing else was done to the wine.\u003c\/p\u003e\n\u003cp\u003eRed fruits, dried thyme and a faint stony bite, with soft tannin and a clean, savoury finish. Serve at 14 to 15 degrees, or briefly chilled on a hot day.
