A short spell on skins sets the colour, then the grapes go through the basket press straight into amphora for fermentation and malolactic conversion. From there the wine spends a brief stretch on lees in barrel before being blended in a large concrete egg the winery calls Bacon, then racked to bottle with just a touch of sulphur. Three vessels for one small rosé sounds excessive, but each contributes a different part of the texture.\u003c\/p\u003e\n\u003cp\u003ePale copper in colour, with red cherry, rosehip and a dry, chalky finish that has more grip than most rosé. Serve it cold, 8 to 10 degrees.
