Crostini di Fegatini Toscani (Tuscan Chicken Liver Crostini)
Ingredients:
- 300 g chicken livers, trimmed
- 3 tbsp extra virgin olive oil
- 1 small onion, finely chopped
- 1 small carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 tbsp capers, rinsed
- 2 anchovy fillets
- 80 ml dry white wine
- 2 tbsp butter
- Salt and freshly ground black pepper, to taste
- 8–10 slices rustic Tuscan bread, toasted
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a pan over medium heat. Add onion, carrot, and celery, cooking until softened.
- Add the chicken livers and cook until browned on the outside but still slightly pink inside.
- Stir in the capers and anchovies, cooking for 2 minutes until the anchovies dissolve.
- Deglaze with white wine and let it reduce by half.
- Remove from the heat, add butter, and season with salt and pepper.
- Blend the mixture with a hand blender or food processor until smooth and spreadable.
- Spread generously over toasted bread and garnish with parsley.
- These savoury crostini are a Tuscan classic and pair beautifully with Argiano Non Confunditur, where the wine’s depth of dark fruit and spice balances the richness of the liver spread.
