Lemon-Basil Scallops
Ingredients:
- 500g fresh scallops
- 2 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp fresh basil, chopped
- Salt and pepper, to taste
Instructions:
- Pat scallops dry and season with salt and pepper.
- Heat olive oil and butter in a skillet over medium heat. Sear scallops for 2 minutes on each side until golden.
- Remove scallops and set aside. In the same skillet, sauté garlic until fragrant.
- Add lemon juice, zest, and basil. Stir and return scallops to the pan to coat with the sauce.
- Serve immediately with crusty bread or a light salad.
