Arrosto di Manzo alle Erbe (Herb-Crusted Roast Beef)
Ingredients:
- 1.5kg beef roast
- 2 tbsp rosemary, chopped
- 1 tbsp thyme, chopped
- 4 garlic cloves, minced
- Salt, pepper, and olive oil
- 200mL red wine for deglazing
Instructions:
- Rub beef with herbs, garlic, salt, pepper, and olive oil. Let sit 1 hour.
- Roast in a preheated oven at 200°C for 50–60 minutes, or until desired doneness.
- Deglaze pan with red wine, reduce into sauce.
- Slice and serve with pan sauce and a glass of Castello Romitorio Brunello di Montalcino Riserva.
