Beef Bourguignon
Ingredients:
- 1kg beef chuck, cubed
- 200g bacon, chopped
- 2 carrots, sliced
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 cups red wine
- 2 cups beef stock
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 bouquet garni (herbs)
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot. Brown the beef cubes and set aside.
- Cook bacon until crispy, then add onions, garlic, and carrots. Sauté until soft.
- Stir in tomato paste and deglaze with red wine. Return the beef to the pot.
- Add beef stock and bouquet garni. Simmer on low heat for 2-3 hours until beef is tender.
- Season with salt and pepper, and serve warm with crusty bread.
