Asparagus Risotto
Ingredients:
- 1 cup Arborio rice
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup dry white wine
- 4 cups chicken or vegetable stock, heated
- 1/4 cup Parmesan cheese, grated
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pan and sauté onion and garlic until softened.
- Add Arborio rice and toast for 2 minutes.
- Pour in white wine and stir until absorbed.
- Add stock one ladle at a time, stirring constantly, until the rice is tender and creamy.
- Stir in asparagus during the last 5 minutes of cooking.
- Remove from heat, stir in Parmesan, and season with salt and pepper.
