Recipe

Asparagus Risotto

Ingredients:

  • 1 cup Arborio rice
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable stock, heated
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a large pan and sauté onion and garlic until softened.
  2. Add Arborio rice and toast for 2 minutes.
  3. Pour in white wine and stir until absorbed.
  4. Add stock one ladle at a time, stirring constantly, until the rice is tender and creamy.
  5. Stir in asparagus during the last 5 minutes of cooking.
  6. Remove from heat, stir in Parmesan, and season with salt and pepper.
