Coq au Pinot Noir (Chicken in Pinot Noir)
Ingredients:
- 1.5kg chicken pieces (thighs, drumsticks, or a mixture)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 onion, finely sliced
- 2 garlic cloves, minced
- 150g mushrooms, sliced
- 1 carrot, chopped
- 1 cup Pinot Noir (preferably Domaine Albert Mann 'Clos de la Faille')
- 1 cup chicken stock
- 2 sprigs fresh thyme
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions:
- Melt the butter and olive oil in a large casserole dish over medium-high heat. Season the chicken pieces with salt and pepper, then brown them on all sides. Remove and set aside.
- Sauté the onion, garlic, mushrooms, and carrot in the same dish until lightly browned.
- Deglaze with the Pinot Noir, scraping up any browned bits. Return the chicken to the dish and add chicken stock and thyme.
- Bring to a simmer, then reduce the heat to low. Cover and cook for 30–40 minutes or until the chicken is tender and the flavours have melded.
- Garnish with chopped parsley and serve alongside potatoes or crusty bread.
- Enjoy with a lightly chilled glass of Domaine Albert Mann Pinot Noir 'Clos de la Faille' 2021 for a perfectly paired meal.
