Recipe

Coq au Pinot Noir (Chicken in Pinot Noir)

Ingredients:

  • 1.5kg chicken pieces (thighs, drumsticks, or a mix)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 150g mushrooms, sliced
  • 1 carrot, chopped
  • 1 cup Pinot Noir (preferably Les Saintes Claires)
  • 1 cup chicken stock
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions:

  1. Melt the butter and olive oil in a large casserole dish over medium-high heat. Season the chicken pieces with salt and pepper, then brown on all sides. Remove and set aside.
  2. Sauté the onion, garlic, mushrooms, and carrot until lightly browned.
  3. Deglaze with the Pinot Noir, scraping up any browned bits. Return the chicken to the dish and add chicken stock and thyme.
  4. Bring to a gentle simmer, reduce heat to low, cover, and cook for 30–40 minutes or until the chicken is tender and flavours are well combined.
  5. Garnish with chopped parsley and serve alongside mashed potatoes or crusty bread.
