Recipe

Truite aux Amandes (Trout with Almonds)

Ingredients:

  • 2 whole trout, cleaned and deboned if preferred
  • 30g butter
  • 2 tbsp olive oil
  • 50g sliced almonds
  • Juice of ½ lemon
  • 1 tbsp chopped parsley
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Pat the trout dry and season both inside and out with salt and pepper.
  2. In a large pan, heat the olive oil over medium-high heat. Carefully place the trout in the pan and cook for 3–4 minutes per side, or until the skin is crisp and the flesh flakes easily.
  3. Remove the trout and set aside on a warm plate. Reduce the heat to medium, then add butter and almonds to the same pan.
  4. Sauté the almonds until they turn light golden brown, being careful not to burn them.
  5. Stir in the lemon juice and chopped parsley. Season with salt and pepper.
  6. Pour the almond sauce over the trout and serve immediately with lemon wedges on the side.
