Truite aux Amandes (Trout with Almonds)
Ingredients:
- 2 whole trout, cleaned and deboned if preferred
- 30g butter
- 2 tbsp olive oil
- 50g sliced almonds
- Juice of ½ lemon
- 1 tbsp chopped parsley
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions:
- Pat the trout dry and season both inside and out with salt and pepper.
- In a large pan, heat the olive oil over medium-high heat. Carefully place the trout in the pan and cook for 3–4 minutes per side, or until the skin is crisp and the flesh flakes easily.
- Remove the trout and set aside on a warm plate. Reduce the heat to medium, then add butter and almonds to the same pan.
- Sauté the almonds until they turn light golden brown, being careful not to burn them.
- Stir in the lemon juice and chopped parsley. Season with salt and pepper.
- Pour the almond sauce over the trout and serve immediately with lemon wedges on the side.
